The #1 WORST food for your skin, joints & blood sugar?

Due to biochemical reactions in your body that occur with every type of food you eat on a daily basis, some foods age you FASTER than your real age, while other foods help to FIGHT aging.
Eat the wrong foods regularly, and you can look and feel 10 or more years OLDER than your real age (not fun!) ... but eat the right foods, and over time, you can start to look 5-10 years YOUNGER than your real age.
Three of the processes that go on inside your body that have a MAJOR impact on your rate of aging are called "glycation", "inflammation", and "oxidation".
When we talk about aging, we're not just talking about wrinkles on your skin or how thick your hair is... we're also talking about factors that you can't see, such as how well your organs function, and whether your joints are degrading.
Yes, I'm sure you'll agree this is much more important than just how you look superficially (although we'll show you how to improve BOTH below!)
With the title of this article, you might have guessed that obvious answers like sugar or trans fat would be what we talk about in this article.  Yes, we all already know those are bad, but I want to discuss another food that ages your body faster than normal... and it's one that you might not expect!
So let's dig right in and I'll show you how your rate of aging can be directly related to the foods you might eat every day, and how to protect yourself...


The #1 WORST food that ages you faster:
Wheat based foods (yes, even "whole wheat")
Before I tell you why wheat can actually speed up the aging process in your body, let's clarify some simple biochemistry in your body...

This deals with "glycation" in your body, and substances called Advanced Glycation End Products (AGEs).  These nasty little compounds called AGEs speed up the aging process in your body including damage over time to your organs, your joints, and of course, wrinkled skin.
So with that said, what is one of the biggest factors that increase production of AGEs inside your body?  This may surprise you, but high blood sugar levels over time dramatically increase age-accelerating AGEs in your body.  This is why type 2 diabetics many times appear that they have not aged well and look older than their real age.  But this age-increasing effect is not just limited to diabetics.
So, let's get back to how "whole wheat" relates to this...

Here is a little-known fact that's often covered up by the massive marketing campaigns by giant food companies that want you to believe that "whole wheat" is healthy for you... but the fact is that wheat contains a very unusual type of carbohydrate (not found in other foods) called Amylopectin-A, which has been found in some tests to spike your blood sugar HIGHER than even pure table sugar.
In fact, amylopectin-A (from wheat) raises your blood sugar MORE than almost any other carbohydrate source on earth based on blood sugar response testing that's documented in studies.
This means that wheat-based foods such as breads, bagels, cereals, muffins, and other baked goods often cause MUCH higher blood sugar levels than most other carbohydrate sources.  If you don't believe me, here's something you should know... I ran personal blood sugar tests on myself using a blood glucometer about 45 minutes after eating 2 slices of wheat bread vs eating a bowl of oatmeal, with equivalent grams of carbs.

The blood sugar test results:
2 slices of whole wheat toast:
45 minutes after consumption:  Blood sugar spiked from 86 fasting level to 155.

1 Bowl of Oatmeal (equivalent grams of carbs to 2 slices wheat toast)
45 minutes after consumption:   Blood sugar raised from 86 fasting level to 112

As you know now, the higher your average blood sugar levels are over time, the more AGEs are formed inside your body, which makes you age FASTER.  Clearly, the whole wheat spiked blood sugar MUCH higher than the oatmeal, and if you don't know, 155 is a massive blood sugar reading that will certainly contribute to faster aging if you eat wheat frequently.
You've probably also heard about the potential health-damaging effects of gluten (another problematic compound found in wheat that can cause inflammation in your digestive system) in the news recently, but this blood sugar aspect we just covered is not talked about that often, and is yet another reason to reduce or eliminate wheat-based foods in your diet.  Your body will thank you by aging slower and looking YOUNGER!
And losing bodyfat is typically another fun side effect of eliminating or reducing wheat in your diet!
Yet another problem with wheat-based foods and aging...
As it turns out, baked wheat products contain carcinogenic chemicals called acrylamides that form in the browned portion of breads, cereals, muffins, etc.  These carcinogenic acrylamides have been linked in studies to possible increased risk of cancer and accelerated aging.  Note that acrylamides are also found in high levels in other browned carbohydrate sources such as french fries or any other browned starchy foods.

Don't worry though... There's a trick that you can use to protect yourself from these carcinogenic acrylamides, and it has to do with eating the RIGHT foods that COUNTERACT damage from these nasty chemicals.  I'll show you how to find the EXACT foods that protect your body!

Are wine, beer, cheese, spinach, tomatoes, peppers, tea and coffee good or bad for you?

Controversy surrounds many of these foods, but what's the truth?  Even the "beloved" spinach, tomatoes, and tea can have some problems, so let's explore...

One thing I’ve come to the conclusion about over my decades of studying nutrition is that even if something is “good for you” still might not mean it’s best to eat a bushel of it every single day.
In today's article, we'll even look at a few "darlings" of the nutrition world such as spinach, tomatoes, and tea, and why too much of these can even be bad in some cases.  And we'll also look at things you're told by the media are "bad for you" such as beer, coffee, cheese and butter, and why these can actually be good in many cases.

Let's start with "toxins"...
It seems that even some substances labeled as “toxins” by scientists can sometimes be good for you in small doses.  Alcohol is one example.  It’s considered a toxin (intoxicated) by any scientist, yet for some reason, study after study shows that light to moderate drinkers live significantly longer than both non-drinkers or heavy drinkers.  It's an interesting fact isn't it... that just small amounts of something considered a "toxin" could help you live longer than if you didn't drink any of it at all, but too much of it will kill you.
There are confounding variables though that are hard to decipher in mixed group research or surveys of people's drinking habits… for one, it's rarely studied as to whether hard liquor drinkers would actually fare as well as somebody that ONLY drank wine or beer, each of which have their own unique antioxidants that are usually missing in hard alcohol.  So is the increase in life span of light to moderate drinkers due to the antioxidants in wine and beer as opposed to the alcohol itself?  Or is it a synergistic effect of both?
One study I read about recently showed that 1-2 glasses of red wine per day significantly increased good bacteria in the gut and decreased bad bacteria (in addition to benefits to blood pressure, triglycerides, LDL, and C-reactive protein), yet for some reason, hard liquor (gin was tested) didn’t have any of the same benefits.  It was concluded that it's most likely the polyphenols and resveratrol in wine that helps the good gut probiotics flourish and possibly also improves the blood chemistry too.  And as you know, good belly bugs have immense benefits to your digestive system and your immune system.
Personally, I’ve grown quite fond recently with having one glass of red wine with dinner about 5-6 nights per week now.  I look forward to that glass of wine each night, sometimes with a good aged cheese out on the deck watching the sunset before dinner.  Occasionally I have 2 glasses if I feel like it.  But I know if I had 7 or 8 glasses, it’s more toxic than beneficial.  We've been able to find some good organic wines at the local wine shop for only about $12 a bottle... not too shabby!
Now in regards to the light or moderate drinkers living longer than non-drinkers or heavy drinkers, I certainly realize this doesn't mean that you HAVE to drink in order to live to 100.  I know, I know... your Great Aunt Helen lived to 102 and never drank a sip of alcohol right?  Well, I'm sure there are also examples of someone you know that smoked their whole life and lived to 100 too.  The point is that these are just general stats on the population as a whole (smokers die younger, light drinkers live longer, etc), and every individual has thousands of different factors (nutritional, lifestyle, social, stress, etc) that combine together to determine how long they'll live.

Beer?
In my 20's and early 30's, my buddies and I used to drink a lot of "light" beers on weekends when we were hanging out together.  Nowadays, I don't drink much beer at all anymore, but when I do choose to enjoy a beer maybe once a week, I always choose a quality dark beer.
A good dark beer is known to have a decent quantity of unique antioxidants and B vitamins that are at much lower quantities in light beer, if they're present at all in some brands.  On the other hand, too much beer contains too much estrogenic compounds from the hops which have their own health consequences if overcomsumed, for both men and women…
Once again, moderation seems to be best.  A couple beers a week probably has benefits, but a six-pack or more a night might put you in an early grave.
What about possible detriments of beer since it was brewed using barley and/or wheat as the base?  After all, most Paleo eating plans try to avoid grains because of some of the problematic components of many grains...
Well, while it's true that I personally try to avoid most grains because of some of the digestive-system harming antinutrients and gluten (which also affects immune system and lots more), this is less of an issue with beer because it's been fermented.  Any time you ferment something, the microbes involved in the fermentation effectively render many of the toxins more neutral and easier to digest.
This is why fermented soy can actually be somewhat healthy, while unfermented soy is terrible for you.  This is also why sourdough bread (since it's been fermented) is less harmful to you than regular whole wheat bread, and the gluten is actually more digestible in fermented sourdough bread (more on that another day).  This is also why fermented dairy such as kefir and yogurt are the most digestible forms of dairy, and much more favorable compared to plain milk.

Cheese?
Speaking of fermented foods and also the confusing topic for most people of dairy, let's talk CHEESE...
Many old-school nutritionists, dieticians, and news reporters that don't understand true nutritional biochemistry always talk about the FAT in cheese.  They say stuff like "cheese is fattening" or "always choose low-fat or fat-free cheese".  If you read my article here, you'll see why the fat in grass-fed cheese can help you to burn fat and even prevent heart disease.  I know that may sound crazy, but you can't ignore the fact that the fat in grass-fed dairy contains powerful nutrients such as vitamin K2, which has been shown to prevent arterial calcification, as well as the healthy fat, CLA, which is shown to help burn fat, build muscle, and fight cancer.
Aside from the fat portion of cheese, which we know may actually be the healthiest part of any grass-fed cheese, what about the digestibility of cheese, and components like the casein?  Well, it's true that certain people may have difficulty digesting the casein (or lactose) in some dairy products.  But keep in mind that fermented dairy products like kefir, yogurt, and aged cheeses are generally the easiest to digest since they've already been "pre-digested" by microbes in the fermentation process.  So the majority of people do not have issues with digesting fermented forms of dairy.  And kefir is 99% lactose-free in most good brands because the microbes consume and digest the lactose in the fermentation process.
When it comes to cheese though, the KEY to digestibility is that it's a good quality AGED cheese... A true aged cheese that's gone through multiple stages of fermentation from various forms of microbes will always be the easiest to digest due to the pre-digestion already performed by many of the microbes, as each stage in the aging process will help break down the dairy components into more digestible forms.  For example, if you like cheddar cheese, one of the best options that's also easy to find at most stores is Kerrygold Irish... each type has been aged for different amounts of time, and all of their cheeses are from grass-fed cows.  I've found several European aged cheeses such as Midnight Moon and Ewephoria (aged goat and sheep cheeses) which I'm in LOVE with!
Whatever you do, steer clear of cheap processed cheeses like American cheese, salty cheese spreads, cheese "loaf", etc as these are generally not healthy.

What could possibly be wrong with Spinach?
Everybody knows that spinach is great for us, right?  After all, spinach is loaded with antioxidants, fiber, vitamins, and minerals, all of which are wonderful for our bodies.  And of course, Popeye got his muscles from eating spinach :)
However, spinach and other dark leafy greens contain higher amounts of oxalic acid which is known to cause kidney stones or kidney damage if you take in too much for too long.  Most information available says that for most people, you’d have to eat very large amounts of spinach and eat it chronically to actually see negative effects, so this seems to be yet another example of moderation is probably best.
My takeaway... A small mixed greens salad each night with dinner is probably beneficial to our health, but a massive greens salad 2 or 3 times a day, every single day is probably too much and may cause problems with too much oxalic acid.

Nightshade Vegetables:
This is represented mostly by eggplant, tomatoes, potatoes, and peppers as the most common members of this family.  There are also some wild versions of nightshades that apparently are highly toxic if you ate them in the wild.  Our common agricultural nightshades are much safer, but still contain small levels of certain problematic compounds that have actually been linked to Arthritis and other inappropriate calcification type effects in certain people that are sensitive to them and over long periods of time of consuming them.
Tomotoes and peppers have the powerful antioxidant lycopene.  Eggplant skin has powerful antioxidants being studied in fighting cancer.  Potatoes are loaded with valuable minerals and are fine to eat in moderation (at the right times) for active people that workout a lot to fuel anaerobic high intensity training and muscle glycogen replenishment.  On the other hand, potatoes also contain toxins called glycoalkaloids that are not good for you if consumed too frequently.  So as you can see, although many of these plants have benefits, they can also have small amounts of toxins too that can be problematic if consumed too frequently.
Once again, maybe it’s beneficial to have tomatoes, peppers, and potatoes 2 or 3 times a week for their own unique antioxidants, vitamins and minerals, but perhaps eating them with every single meal has more detriments than benefits.
Probably another perfect example of moderation is best.  Are we seeing a pattern here yet?
Interestingly, I found out through some digging through research that a high intake of vitamin K2 from things like grass-fed butter (and grass-fed cream and cheese), organ meats, and certain fermented veggies (krauts or kimchi) can counteract any calcification effects of the toxins that are in nightshade vegetables.  This is similar to the research I dug up showing that vitamin K2 also helps prevent or reverse calcification in the arteries too!   Hmm, no wonder heart disease increased with the advent of margarine and the decrease in consumption of butter in our society...  Not only were the trans fats in margarine probably responsible for some of the damage, but also the LACK of essential vitamin K2 caused by fooling everyone into removing butter from their diet exacerbated the heart problems!
Leave it to big business and food marketing to screw up what our grandparents were doing right in the past.

Is there anything wrong with healthy Tea?
We all know that various teas including white, green, black, oolong, red, and herbal teas all have powerful and unique antioxidants that protect us from degenerative diseases like cancer and heart disease.  And we also know that some phytochemicals in teas can even cause a very slight increase in fat loss, although I think that effect is fairly small, and still requires the rest of the diet to be on point.
However, I saw a report recently that non-organic tea originating from China was found to have alarmingly high levels of dangerous pesticides in the tea (both black and green), and apparently, a lot of popular brands failed pesticide residue testing.  Cancer is a concern with chronic pesticide ingestion.
My main lesson from reading these reports was that I'm simply going to make a greater effort to always choose organic tea brands from now on, because it would be illegal to be labeled organic and still be teeming with pesticides.  Variety also seems to be key with teas as well to avoid overuse of any one type of tea.  I personally like to make a big batch of iced tea a couple times a week and I usually mix green, oolong, white, rooibos, and herbal tea bags all together into the pot to get a nice blended taste, but also a good blend of antioxidants that are unique to each type of tea.

Coffee?
For some reason, most people think that their daily cup of coffee is "bad" for them.  But if you avoid the sugar and fake creamers (use REAL cream and stevia instead!), it's actually a fairly healthy drink that's oozing with beneficial antioxidants, phenolic nutrients, chlorogenic acids, and other healthy compounds that far outweigh any small amounts of acrylamides or other negative compounds found in coffee.
Numerous studies over the years have linked coffee consumption to reduced risk of various forms of cancer.  In fact, a 2011 Harvard study showed that men who drink 1-3 cups of coffee daily reduce their risk of prostate cancer by 30%.  Other studies have linked coffee consumption to reduced risk of diabetes.
I personally LOVE having 1 cup of really good coffee per day -- with grass-fed cream of course, for that all-important vitamin K2.  By the way, Organic Valley has a great pasture-raised cream that I've found at many grocery stores.
I look forward my freshly ground (I use a Bullet to grind the beans fresh, since this tastes far superior to pre-ground coffee) organic coffee in the morning with my nut-flour based Paleo homemade blueberry muffin... I'll share my recipe for that in a newsletter soon, but my friend Kelley Herring also has an amazing low-carb Paleo blueberry muffin recipe in her Guilt-Free Desserts manual... And as you probably guessed since you know my style, I also top my Paleo blueberry muffins with some melted Kerrygold grass-fed butter.  Mmm, what a delicious start to any morning!
Once again, staying with the theme of moderation, if you drink too much coffee, you can possibly suffer the detriments of too much caffeine and the possible adrenal fatigue that can be caused by too much caffeine for long periods of time... but small amounts of daily coffee and you reap the benefits of the antioxidants that are unique to the coffee bean.  I’ve been making a big effort to choose organic coffee beans at least 90-95% of the time, since apparently coffee is one of the worst crops in terms of pesticides, fungicides, and herbicides.  And remember that pesticides can have estrogenic effects, but also carcinogenic effects, and that's why we choose organic most of the time.

With respect to the discussion of eating things in "moderation"... Keep in mind though that I don't agree with people that say "everything in moderation" ... For example, there's ZERO reason to consume trans fats in moderation. They're just too deadly to even consume at all in my opinion, when you can choose natural healthy fats instead.  And why choose to eat high fructose corn syrup in moderation when you can use real sweeteners instead, such as honey, stevia, or maple syrup.  I'm sure you get my point.
To summarize, I think the biggest thing you can take from this article is that many foods and drinks have some negative compounds in them, and some beneficial compounds too.  If you keep good variety in your diet, and don't over-consume any particular type of food or drink, the health benefits can be amazing from many of these delicious foods and drinks.  But even some healthy foods can have their problems if over-consumed.
That's why I enjoy ONE cup of daily coffee, ONE (or occasionally two) cups of daily red wine, one or two cups of a variety of teas daily, ONE serving of a leafy greens salad each day, Nightshade vegetables like tomatoes and peppers a couple times a week, the healthiest types of aged cheeses a few times a week, and even the occasional dark beer... and I know that these are generally doing a body good... PLUS, they're just really enjoyable and a fun part of life!

The TRUTH about Good Carbs, Bad Carbs, Low vs High Carbs, and all of the Carb Confusion

With so much talk, confusion, and controversy in recent years about "carbs", I wanted to give you my take on good carbs vs bad carbs, low carb vs high-carb, and all the other "carb confusion" out there.  I'll also show you some of my favorite healthy carbohydrate choices, and exactly why they are better than other choices.
First of all, although I'm not a "low carb" extremist, I do believe that one of the main reasons so many people struggle to ever lose any body fat is that (regardless of complex vs simple carbs) they are over-consuming processed grain-based or sugary carbohydrates such as:
  • cereals
  • pasta
  • rice
  • bagels
  • muffins
  • breads (even whole grain varieties are not ideal if you're looking to lose body fat & prevent digestive system damage)
  • sodas (loaded with sugar and/or high fructose corn syrup)
  • juices (way too much fructose and total sugar without any of the fruit fiber)
  • candies
  • crackers
It is extremely hard to lose body fat if you're over consuming any of these types of carbohydrates (even if you workout very hard).  In addition to causing wild blood sugar swings and insulin surges which can promote body fat deposition and throw your hormonal balance out of whack, eating too many carbs also increases your appetite and cravings, leading you to eat MORE calories overall compared to if you ate a higher percentage of fat.
Note that I didn't include potatoes in the list of processed carbohydrates. Despite the trash talking they get from many fitness professionals, I think whole potatoes (not fries or chips!) are a nutrient-dense healthy food in general, although the skins of potatoes do contain mild amounts of toxins.
Even carbohydrate sources that most people think are "healthy" usually are just excess calories that don't really deliver a whole lot of nutrient density... and many types of breads and cereals pretend to be "whole grain" with clever marketing while in reality the first ingredient in them is refined flour, which is just going to shoot your blood sugar through the roof.
However, even "whole grain" products have been shown to have just as much of a massive blood sugar impact as refined grains in many cases, particularly when it comes to wheat products.  And unfortunately, whole grains are also bad because it's generally the bran portion of grains that contains the majority of gut-damaging antinutrients that can inflame your digestive system or prevent absorption of certain minerals by your body.

What does "low carb" vs "moderate carb" vs "high carb" even mean?
According to expert Nutrition author Chris Kresser, below are the differences between low, moderate, or high carb ratios compared to your total calories.  Keep in mind that the average person eating a modern western diet consumes a massive 50-60% of their calories from carbs.
  • Very Low carb = lower than 10% of total calories (Good for therapeutic uses such as cancer treatment, Diabetes treatment, Alzheimers & other conditions)
  • Low carb = 10-15% of total calories  (good for weight loss, blood sugar control, digestive improvement, and Diabetes control)
  • Moderate carb = 15-30% of total calories (good range for the average person to maintain weight, balance energy, balance hormones, etc)
  • High carb = greater than 30% of total calories  (Good for people that want to GAIN weight, gain muscle, or are high level athletes)
Personally, I tend to cycle between the low-carb group and the moderate-carb group depending on the day of the week, so I range between 10% to 30% of my daily calories from carbohydrates.  I've found this is where I feel best and perform best.  If I go "high-carb" like the average American, I pack on body fat VERY fast, and it's not fun.  I try to keep high-carb days to only 1 day per week, aka, my cheat day.
Note:  If you consume 2000 calories per day, then that means 200 calories, or approx 50 grams of carbs for the day would be 10% of your total calories.  For me, because of my height and high activity levels (I'm a big skier, mountain biker, hiker, swimmer, etc), my daily maintenance is more around 3000 calories, so that would mean 75 grams of carbs would represent 10% of my calories (75 x 4 = 300 calories from carbs).  On most days, I'd estimate that I get between 80-100 grams of carbs total, which is equivalent to 1 piece of fruit, 1 sweet potato, some various veggies throughout the day, along with a little bit of honey in my tea, and a little bit of coconut sugar in my coffee.
 
My take on it is that the majority of people struggling to lose body fat would do much better following these types of carb guidelines:

1. Reduce or eliminate your grain-based carb products in the diet (cereal, pasta, rice, crackers, etc) and focus more of your diet on healthy grass-fed and/or free-range meats and eggs, grass-fed raw dairy or fermented dairy (kefir and yogurt), nuts, and TONS of vegetables and fruits (for most people, keeping fruit to 1-2 pieces per day is best). 
I understand that it's very hard for most people to give up entirely their breads, cereals, and pastas.  But don't worry, just save the grain-based carbs for no more than a 1-day per week "cheat day", and most people can still do just fine if you're not gluten intolerant or Celiac.
2. Instead of the grains for most of your carbs, try getting most of your carbs from vegetables, sweet potatoes, and a variety of whole fruits and berries (NOT fruit juices, which remove the beneficial fiber as well as other essential parts of the fruit).
3.  If you're going to eat any grains at all, focus on sprouted grains if you can, or sourdough on the occasions that you absolutely need to have bread.  Since sourdough bread has been fermented, some of the antinutrients have been broken down, and even the gluten is thought to be at least slightly more digestible in a sourdough bread.
Note on wheat germ --  although wheat germ is a nutrient dense food (compared to the nutrient-poor starch portion of wheat), beware of the gluten in wheat if you have any intolerance.  Many people have wheat/gluten intolerances and don't even realize it.  It could be worth it to get tested to see how your body is handling wheat.
If you are choosing sprouted grain breads, make sure that it's 100% sprouted grain, and not regular flour as the main ingredient followed by a portion of sprouted grains.  Sprouted grains are healthier than "whole grains" because the sprouting process deactivates many of the antinutrients that can cause digestive problems and prevent certain minerals from being absorbed.
4. To replace the void if you're used to consuming lots of bread, pasta, cereals, and other carb sources... try filling that void with more healthy fats such as nuts, seeds, avocados, coconut oil, olive oil, olives, grass-fed butter and cream, aged cheeses, nut butters, as well as healthy proteins such as grass-fed dairy and meats, whole free-range organic eggs, etc.
Healthy fats and proteins go a long way to satisfying your appetite, controlling proper hormone and blood sugar levels, and helping you to make real progress on fat loss.  Consuming more healthy fats instead of carbs also helps to transition your metabolism into a "fat adapted metabolism" instead of being a "carb burner" like most people.  Having a "fat adapted metabolism" gives you more stable energy levels, stable blood sugar, balanced hormones, and more.  On the other hand, being a carb-burner gives you more energy spikes and dips, blood sugar swings, and cravings.
With all of that said, even when I'm eating a low-moderate carbohydrate diet, here's one of my favorite carb sources that is high in fiber as well as tons of vitamins, minerals, and antioxidants:

Sweet potatoes or yams
I always choose the orange varieties instead of the white varieties of sweet potatoes for more carotenes. One of the problems with sweet potatoes is the time it takes to bake a sweet potato for 1 to 1.5 hrs.
I cook my sweet potatoes in a different way that only takes 5 minutes and they come out delicious... and no, I would NEVER use a microwave (We talk more about why never to use a microwave to cook your foods in this article).
The easiest and quickest way I've found to cook up a sweet potato is to slice it up into thin slivers and put it into a pan that you can cover with a lid.  I add a touch of butter, virgin coconut oil (beneficial medium chain triglycerides), and about 3-4 Tbsp of water and simmer with a covered lid for about 5 minutes. 
When the sweet potatoes are soft, then add a little cinnamon and maybe a touch (no more than a teaspoon) of real maple syrup (if you want a little more sweet flavor) and you're all set with a delicious healthy carb side dish to go with any meat dish.  Add a side salad and you've got the perfect lean-body meal plan.

3 So-Called "Healthy" Foods to STOP Eating

 (if you want a flat stomach & healthy body)

I was reading a statistic in a nutrition book recently, and this is going to shock you...
Now before I tell you the statistic, let's keep an important fact in mind... according to well renowned nutrition author Michael Pollan in his book, In Defense of Food, humankind has historically consumed approximately 80,000 different species of edible plants, animals, and fungi, and approximately 3,000 of those have been widespread foods of the human diet.
Now get ready for a shocking and appalling statistic...
Currently, the average adult eating a typical modern western diet in countries such as the US, Canada, Australia, etc consumes approximately 67% of their total caloric intake from only 3 foods -- CORN, SOY, AND WHEAT (and their derivatives).
What would be considered a reasonably healthy amount of corn, soy, and wheat in the human diet?
Based on hundreds of thousands of years of human history, and what the natural diet of our ancestors was (indicating what our digestive systems are still programmed to digest most effectively), this would probably be in the range of about 1% to 4% MAX of our total calories from corn, soy, and wheat.
Considering that modern humans are eating 67% of their total calories from corn, soy, wheat... you can see why we have massive problems in our health, and our weight!
It's not a surprise that we have so many intolerances and allergies, specifically to soy and wheat (and gluten intolerance) ... the human digestive system was simply never meant to consume these substances in such MASSIVE quantities.
Keep in mind that these massively high levels of corn, soy, and wheat in our modern human diet is a relatively new phenomenon that originated from the economics of the multi-billion dollar corn, soy, and wheat industries.  It really HAS been all about the money... NOT about our health!
By "derivatives" of corn, soy, and wheat, this means the food additives such as:
  • high fructose corn syrup (HFCS)
  • corn oil
  • soybean oil (hydrogenated or plain refined)
  • soy protein
  • refined wheat flour
  • hundreds of other food additives such as maltodextrin, corn or wheat starch, soy lecithin, mono and diglycerides, etc, etc
This doesn't surprise me... consider how much soda or other sweetened drinks (with loads of HFCS) that the average person drinks daily... this is a LOT of calories from just 1 sole corn derivative.  Even marinades, salad dressings, ketchup, breads, and 100's of other foods contain loads of belly-fattening HFCS!
Also think about how many processed foods we have that are either fried in soybean or corn oil... and even if the foods are not fried in these oils, these oils are additives to almost every processed food... chips, candies, cakes, salad dressings, tomato sauces, burrito wraps, corn chips, breaded chicken, etc, etc.  This is a LOT of calories from these 2 other corn and soy derivatives... both of them EXTREMELY UNHEALTHY!
On top of that, think about how much breads, cereals, pastas, muffins, and other highly processed wheat products that most people consume each day.  Again, this is LOADS of unhealthy, blood-sugar spiking, nutrient-poor calories, that more than half of the population has some degree of intolerance to anyway.
It gets even worse!
Not only are we (as a society) eating 67% of our total calories from corn, soy, and wheat... but because of the economics involved (specifically with cheap corn and soy) we are also feeding most of our farm animals corn and soy now too... again amplifying the amount of corn and soy that passes through the food chain and (from a biochemical standpoint) ends up in our bodies.
Probably the 2 worst examples of this blatant mismanagement of our food supply is how our factory farmed chickens and cows are fed.
Cows are fed mostly corn in factory feedlot farms, even though their digestive systems are only meant to eat grass and other forage. This makes the cows sick (hmm... E-coli anyone?), alters the omega-6 to omega-3 ratio of the fats to unhealthy levels, and also diminishes the healthy CLA fats that would occur naturally in grass-fed beef.  All of these problems go away if our cows are fed what they were made to eat naturally - grass and other green forage!
Our chickens are also fed a diet of mostly corn and soy and crowded in tight pens in horrendous conditions... when the fact is that a chicken was meant to roam around the outdoors eating a mixture of greens, insects, worms, seeds, etc.  When chickens are kept inside in tight quarters and fed only grains, it leads to an unhealthy meat for you to eat, and less healthy eggs compared to free-roaming chickens allowed to eat an outdoors diet.
But it doesn't stop there...
Our food supply has gotten so screwed up that we're even feeding our salmon and other farmed fish corn and soy...again because of the economics involved.  How ludicrous is this, considering that fish are meant to eat a diverse diet of smaller fish, worms, bugs, etc.  Again this makes farm raised fish unhealthy in terms of nutrition compared to their wild counterparts.
So even when you're eating chicken, beef, and fish, you're still essentially getting even MORE corn and soy into your body (from a biochemical standpoint) ...considering that the cows, chickens, and farmed fish ate mostly soy and corn.
So it's actually WORSE than just 67% isn't it!
Why is it so unhealthy to consume 67% of our calories from corn, soy, and wheat?
Well, this section could encompass an entire book, so to keep this short, I'll just throw out a few random reasons...
  • Skews the ratio of omega-6 to omega-3 fats in our diet to as high as 30:1, when a natural ratio of 1:1 to 2:1 in our ancestral human diet is considered healthy.  This imbalance causes massive inflammation in your body, which is a leading cause of many diseases, cancer, and even weight gain.
  • Increasing problems with gluten intolerance -- related to heavy wheat consumption that is rampant these days, combined with foreign gluten proteins that have been formed from hybridization of wheat crops.
  • Problems with weight gain, blood-sugar swings, and reduced insulin sensitivity (and progression of diabetes) due to excessive refined corn and wheat flours, as well as excess HFCS in the average person's diet.  Important Note:  the starch in wheat (yes, even so-called "whole wheat") is a unique and problematic type of carbohydrate called Amylopectin-A which has been shown in blood sugar testing to skyrocket your blood sugar even HIGHER than pure table sugar... and this can cause hormone imbalances, cravings, prediabetes, and weight gain... Yikes!
  • Soy and corn are the most genetically modified crops (which also allows more pesticides and herbicides to be used, which act as "xenoestrogens", causing hormone disruption in women, man boobs in some cases in men, and what's been termed "stubborn belly fat" in both sexes 
  • Soy products and soy derivatives contain a double-whammy of xenoestrogens as well as phytoestrogens... again creating an environment in your body for fat storage, carcinogenic effects, and even "man boobs" for some men in very severe cases.
  • and the list could go on and on and on...
     
So how do you fight against all of the deceptive marketing in the food industry, and finally take control of your weight and your health?

Dairy Fat Found to PREVENT Artery Clogging? (Study Results)

You've been told that dairy fat from butter, cheese and cream CLOGS your arteries... WRONG!  Studies show 3 super-nutrients in certain dairy fat found to PROTECT you from heart disease

For decades now, news reporters with zero nutrition education, government agencies using outdated information from the 1960's, and well-meaning but misinformed dieticians have pounded into your head that dairy fat from butter, cream, cheese, and other full-fat dairy products is terrible for you and "CLOGS" your arteries... but what if they've been WRONG all along?
Image result for butterAfter all, it wouldn't be the first time that the government, the media, and dieticians have been wrong about a nutrition topic... remember for years when everyone falsely believed that trans fat laden margarine was better for you than butter?  Wow, were they ever wrong about that!  And remember the years when everyone falsely believed that egg yolks were bad for you?  Well, I think most of us are more educated now about that as well... At least I hope so!
Did you know that between the years 1910 to 2000, the average annual butter consumption per person in the US decreased from 18 lbs per year in 1910 to less than 4 lbs per year in 2000... Meanwhile heart disease rates between 1910 to 2000 QUADRUPLED.
Hmm... so let's think about that for a minute...we ate almost 5x the amount of butter on average in 1910 and yet heart disease was RARE at the time.  Clearly the argument that so many health "experts" make about dairy fat being "deadly" is not accurate and needs to be re-evaluated.
Let's look at some more interesting examples...
With regards to dairy fat from butter, cheese, and cream, if you believed the media that dairy fat clogs your arteries, then why do the French stay leaner and have a much lower rate of heart disease despite a diet very high in full-fat cheese, butter, and cream compared to Americans that purposely try to reduce their butter intake and choose non-fat or reduced-fat dairy products most of the time?
Or why do the Swiss, known for their rich full-fat dairy products including lots of cheese display lower heart disease rates than Americans?
Or how about the natives of the Caucasus Mountains in Eastern Europe that routinely live to over 100 years old while drinking full-fat dairy almost daily throughout their lives in the form of Kefir?
We've also got the Maasai and Samburu tribes from Africa that eat a diet rich in full-fat dairy (4-5x the consumption of dairy fat on average than most Americans) and yet display robust health with a distinct lack of degenerative diseases like heart disease.
Hmm, what's going on here?
We could go on and on with examples that show the opposite of what you've been told over the years about dairy fat, but the fact of the matter is that all of these "experts" that have told you to avoid dairy fat have been flat out WRONG for decades now!
The TRUTH is... studies are consistently showing that certain unique compounds in dairy fat actually PREVENT the clogging of arteries and reduce your risk of heart disease!
I'll tell you in a second about the powerful compounds in some types of dairy fat that can help reduce your risk of heart disease, but first, please realize that if you eat a lot of inflammatory foods such as sugar, corn syrup, refined grains (wheat and corn cereals, breads, etc), artificial trans fats, refined vegetable oils (soybean oil, corn oil), etc, you will most likely still be clogging your arteries from the inflammation caused by what these foods do to your insides.
So aside from just simply observing certain cultures around the world and their dairy fat intake, what other evidence do we have that compounds found in dairy fat can actually protect you from heart disease and prevent clogging of your arteries?  Well...
Studies involving 3 specific super-nutrients found in grass-fed dairy fat
Note that the 3 nutrients that I'm discussing here that help protect you from heart disease are found mostly in GRASS-FED dairy (pasture-raised) and not conventional grain-fed factory farm dairy that's the majority of dairy found in the US.  Also, realize that we're talking about benefits from the fat portion of the dairy specifically here (yes, the cream and butterfat), so this means FULL-FAT grass-fed dairy is where the benefits will come from and NOT all of these silly skim, 0%, or 1% reduced-fat varieties of yogurts, cheeses, etc.
Note that most dairy from Europe and other parts of the world is typically grass-fed for the majority of their feed and only supplemented with smaller amounts of grain.  For that reason, if you choose European cheeses, you're generally going to get a healthier type of cheese.  And if you can't find butter or cream that's labeled as grass-fed or pasture raised, realize that true Irish butter (Kerrygold is a good brand of Irish butter in the US) or any European butter is usually grass-fed and a better choice.
Although, as consumer awareness is increasing about the benefits of grass-fed dairy in the US, I've noticed that more and more US brands are offering grass-fed yogurt, cheeses, butter, cream, and kefir from small family farm operations that truly allow the cows to freely roam and forage on grass and herbs.
So let's get to those super-nutrients found in the fat of grass-fed dairy:

Dairy Fat Super-Nutrient #1: Vitamin K2
Vitamin K1 is found in leafy greens and is definitely good for you.  However, studies of vitamin K1 in relation to heart disease are neutral, meaning there's no negative or positive response in comparing vitamin K1 and heart disease.
However, the story is quite different with vitamin K2!  In one Dutch study reported in the Journal of Nutrition in 2004, people with the highest vitamin K2 consumption had a whopping 51% lower risk of heart attack mortality and a 26% lower risk of death from all causes compared to those eating the least vitamin K2!  The study concluded that higher vitamin K2 consumption reduced arterial calcification.
Vitamin K2 also helps prevent Arthritis!  That's right... recent studies are showing that Vitamin K2 not only protects against arterial calcification, but also inappropriate calcification in various soft tissues throughout the body, including your joints.
The best sources of vitamin K2...

You guessed it:  grass-fed dairy fat (butter, cream, certain cheeses), organ meats, egg yolks, and certain fermented foods that use a specific starter culture.  In terms of cheeses, brie and gouda are apparently the highest in vitamin K2 due to the cultures that are used to ferment the cheese.  And goose liver is extremely high in vitamin K2 as well.
Isn't it ironic that so many health "experts" have been telling you for decades to avoid dairy fat, and yet dairy fat contains one of the most powerful compounds being studied that helps prevent arterial calcification and clogged arteries.  As I always say, beware of who you trust when it comes to nutrition information!
One other important thing to note about vitamin K2...
Apparently, new research is proving what Weston Price knew all along many many years ago... in order for your body to properly utilize oral vitamin D, you need vitamin K2 as well.  In many of Dr. Price's experiments, he found that patients only had minor improvements in health parameters when given cod liver oil (a concentrated natural source of vitamin D), but when cod liver oil was combined with grass-fed butter for vitamin K2, the health improvements were significantly better, as the vitamin K2 and vitamin D worked together synergistically inside the body.
Also keep in mind that vitamin K2 is generally NOT found in multi-vitamins or other supplements, so you need to obtain it from grass-fed dairy fat or other animal foods such as egg yolks or organ meats.
For those choosing to go on a vegan diet, please realize that vitamin K2 deficiency is a very serious concern.  Vitamin K2 deficiency can disrupt the balance and function that vitamin D and calcium play inside your body (causing inappropriate calcification in your body if you're deficient in K2) and can lead to arterial calcification in vegans that ignore this important nutrient.  Vitamin B12 is another important nutrient that vegans are typically extremely deficient in, and supplemental forms are not as well utilized by the body.

Dairy Fat Super-Nutrient #2: CLA (conjugated linoleic acid)
CLA is a unique type of healthy fat that's found in the fat from grass-fed meat or dairy in ruminant animals such as sheep, goats, cows, deer, etc.  In separate studies, CLA has been found to lower the risk for cancer and arteriosclerosis (hardening of the arteries), in addition to improving fat loss.
Grass-fed dairy or meat has been found to contain 3-5x the amount of healthy CLA fats as grain-fed dairy or meat.
In one study in 2010, researchers studied the effects of consumption of a sheep's milk pecorino cheese on atherosclerotic biomarkers (indicating risk for heart disease), and found that the dairy fat in this cheese improved the subjects markers!  They concluded: "intake of the tested dairy product naturally rich in cis-9, trans-11 CLA appeared to cause favourable biochemical changes of atherosclerotic markers."
A search of conjugated linoleic acid in relation to cancer and fat loss on pubmed also brought up dozens of positive studies showing relationship between CLA and reduced cancer risks and improved weight loss.
CLA is yet another example of an extremely healthy fat contained in dairy fat, and higher in grass-fed dairy compared to grain-fed.  Yet another reason why I proclaim that most "experts" and dieticians out there telling you to choose skim or low-fat versions of yogurt, cheeses, or kefir are dead wrong.  Enough with the fat-phobia!  As we're seeing, full-fat dairy can be healthier and taste better too!

Dairy Fat Super-Nutrient #3: Omega-3 Fats
I don't think we need to go into great detail on this one, as most people are aware that omega-3 fatty acids are very important for heart health and almost every aspect of health related to inflammation with more benefits to your body than I could even list here.
And it's no secret that pasture-raised dairy fat is a great source of omega-3 fatty acids.  Just keep in mind that pasture raised dairy fat contains a MUCH better ratio of omega-3 to omega-6 fats than does conventional grain-fed dairy fat.
Most people already consume FAR too much omega-6 fats, and need to raise their levels of omega-3 fats.  Grass-fed dairy fats can certainly help with that goal, just like fish oils do!
With everything in this article being about the health benefits of these 3 super-nutrients found in grass-fed dairy fats, are grain-fed dairy fats actually bad for you?  Well, the way I see it is that the fats in grain-fed dairy are "neutral", meaning I don't believe they are terrible for you like hydrogenated oils are bad for you, but I wouldn't call grain-fed dairy fats beneficial either.
Just be aware that pesticides and other harmful chemicals can accumulate in the fat portion of dairy, so if you choose to use grain-fed dairy, choosing organic is very important.  On the other hand, if it's grass-fed dairy you're eating, it's less important that it's also labeled as organic since the cows will naturally be exposed to less chemicals in a pasture-raised environment.
Before we finish this article, let me also summarize my opinion of healthy vs unhealthy dairy products, since I know there's so much confusion and misinformation about dairy out there...

Healthy Forms of Dairy with Super-Nutrients that Protect Your Health:
  • Pasture-raised cream (aka, grass-fed)
  • Pasture-raised butter
  • Aged cheeses made from pasture-raised milk (European cheeses are generally grass-fed) -- Note that aged cheeses are generally more digestible than non-aged cheeses since microbes have already partially broken them down.
  • Yogurt - only unsweetened, plain, or plain greek gets my vote (organic or grass-fed if possible)
  • Kefir - fermented (cultured) milk with 2-10x more probiotics than yogurt. Kefir is the healthiest, most digestible form of dairy available and is known to heal many digestive problems (7 - 50 Billion probiotics per cup)
  • Lassi - another form of fermented milk, Indian style, and similar to Kefir.

Unhealthy Forms of Dairy:
  • Homogenized/pasteurized commercial milk - homogenized milk fat is thought to be harmful to health due to the microscopic fat particles that are formed from the homogenization processing.
  • Yogurt that's loaded with sugar or artificial sweeteners (which is most brands)
  • Processed non-aged cheeses such as American cheese or cheese spreads
     
The bottom line...
Full-fat grass-fed dairy is NOT the "dangerous" fat that you've been led to believe by the media, the government, and some dieticians.  As you can see in this article, there are at least 3 super-nutrients in the fat portion of dairy that are shown to PROTECT you from heart disease, as well as other health benefits.
Oh, and let's not forget that dairy fat tastes great!  I'll take REAL cream in my coffee any day over fake coffee creamer laden with hydrogenated oil and corn syrup.  I'll take full-fat creamy yogurt over non-fat yogurt any day.  I'll enjoy a good full-fat aged cheese instead of some silly fat-free processed cheese any day too, knowing that the full-fat aged cheese actually does a body good.
I personally choose to cook with butter frequently (mixed with coconut oil many times), and I enjoy full-fat grass-fed cream whenever I drink coffee (Organic Valley has a good pasture-raised cream).  I also drink full-fat Greek style Kefir most days of the week, and I enjoy all of these foods not just for their great taste, but also knowing that they only HELP protect my health.
And this daily ration of dairy fat is certainly not adding any body fat to my frame... I'm still as lean as ever.  As you now know, the CLA in grass-fed dairy fat actually aids fat loss, and the healthy fats overall can help to reduce cravings, control appetite, and balance your hormones.  So let's all please stop being afraid of dairy fat, as long as you avoid that homogenized milk!

Image result for wheatOne thing you may know about me is that I believe in continuing to educate myself on nutrition and fitness, and passing that information onto you, my reader.  I feel that regardless of how much we've already studied over the years, there's always new things you can learn that can help improve your health for a higher quality of life.

That's why I try to always read at least 2 new books every month on nutrition, to keep learning new things all the time.  Despite how much we already know, there's always new things to learn.

I've found this to be especially true of a new book I'm reading right now called Wheat Belly, by Dr. William Davis... there are lots of gems inside this book that I will be sharing with you over the next couple weeks.

There's a lot to discuss about this topic, so I wanted to start with just a few of the most important points in the book...
This is a topic that you should pay close attention to, as wheat is one of the biggest sources of calories in the average person's diet (along with corn and soy, which are equally bad).  The average American eats a whopping 133 pounds of wheat per year, which includes babies in that average, meaning that the average adult eats well over 150 lbs of wheat per year.

Most people eat wheat at every meal...bagels, muffins, or cereal at breakfast... a sandwich at lunch... crackers, pretzels, and other wheat-based snacks all day long... bread on the side at dinner... and maybe even some cake or brownies for dessert.  Yes, a day in the life of the average consumer makes most of us look like "wheat-a-holics".

First, as you know, I've talked a lot in past newsletters about why I believe that grains in general, and also wheat in particular, should not be a large part of your diet as government guidelines recommend.

We've talked about the negatives of anti-nutrients -- compounds in many grains that prevent some nutrients/minerals from being absorbed in your body, leading to possible deficiencies in some nutrients if you eat grains at most meals.

We've also talked about the possible negative effects of gluten on not just celiacs, but a large % of the population that can experience chronic gut inflammation from too much gluten, too often.  And we've also talked about the negative aspects of many grains on your blood sugar cycle, the caloric density of grains, and the weight control challenges that grain-based foods can give you if you're not a super-active athlete.

From all of my research, I see grains on a scale like this:

* oatmeal and rice -- Not the most ideal food, but not so terrible (only if you're VERY active)
* wheat and corn  -- Not much healthy about these at all  (regardless of your activity level)

...with many other grains somewhere in the middle.  It's all about the different anti-nutrients that each contains, the gluten factor, and whether they are genetically modified.

As a generalization, there are many more negative health aspects to wheat and corn than there are in rice and oats.  We'll discuss all of this in more detail in future newsletters.

But let's start today and focus on wheat...

Why in the world does Dr. William Davis conclude in his book that "whole wheat" is terrible for your health?  Well, let's start with a few of the topics Dr. Davis talks about in his book, Wheat Belly:

1.  The wheat we eat today is very different biochemically than the wheat even just 50 years ago
First and foremost, Dr. Davis goes through the history of wheat in the human diet, which goes back to only about 10,000 years ago.  He talks about how the type of wheat that was eaten 1000's of years ago is biochemically not the same wheat we are eating today.  And in fact, even the wheat our grandparents ate just 50 years ago is a far cry biochemically from the wheat that is used today.  This is because wheat has been hybridized heavily over the years to increase crop yield and to increase certain baking characteristics or taste.

Dr. Davis states:  "Small changes in wheat protein structure can spell the difference between a devastating immune response to wheat protein versus no immune response at all."

The take-home message... today's wheat is quite different than even just 50 years ago, as today's wheat has different levels of anti-nutrients and gluten with overall biochemical differences.

Essentially, big agra has hybridized wheat heavily over the last 5 decades to improve things such as crop yield and baking characteristics, but never once thought about the impacts on human health of changing the biochemical structure of wheat.  Although the biochemical differences may seem small, it can have a major impact on how the human digestive system processes the food.
Dr. Davis points this out with this passage... "Wheat gluten proteins, in particular, undergo considerable structural change with hybridization. In one hybridization experiment, 14 new gluten proteins were identified in the offspring that were not present in either parent wheat plant."  This means that modern wheat contains new "foreign" gluten proteins that the human digestive system has not adapted to properly digesting.

Because of all of this, Celiac disease, an autoimmune disease with complete gluten intolerance, has increased fourfold in the last 50 years.  Dr Davis also believes that gluten sensitivity has increased in similar levels in the last 50 years.

The message is that even if you haven't been diagnosed with Celiac or Gluten Sensitivity, it doesn't mean that constant daily gluten intake isn't causing chronic gut inflammation and some sort of possible long term digestive system damage, along with other possible autoimmune diseases.  And remember that chronic gut inflammation can also possibly lead to cancer later in life.

2.  Wheat has addictive properties similar to opiate drugs
Dr Davis makes a very convincing argument that wheat is addictive.  Wheat contains compounds termed "exorphins" that have an effect in your brain similar to opiate drugs.  This explains why people have such a hard time giving up their beloved breads, cereals, pasta, and muffins because these foods are mildly addictive.

I know personally from past experience that if I have have a pasta dinner, I'll go back for seconds and thirds as I just can't seem to stop eating the stuff.  And then hours after dinner, I'll get cravings for more carb-based foods or sweets.  But if I pass on the pasta and just have meat, veggies, and salad, I find myself totally satisfied after dinner with no cravings later at night.

3.  Wheat makes you consume more calories
Possibly due to the additive nature of wheat products, and the subsequent cravings for more carb based foods, Dr Davis cites studies in his book showing that wheat eaters eat more calories overall than people on a gluten-free diet.  One study he cited showed 14% higher caloric intake in wheat eaters than those on a gluten-free food plan.

Dr Davis also notes: "It might be due to the lack of exorphins, reduction of the insulin-glucose cycle that triggers hunger, or some other factor, but elimination of wheat reduces daily calorie intake by 350 to 400 calories -- with no further restrictions on calories, fats, carbohydrates, or portion sizes. No smaller plates, prolonged chewing, or frequent small meals. Just banishing wheat from your table."
The message... it's a LOT easier to control your total calorie intake by avoiding wheat based foods like cereals, breads, muffins, and pasta (with the exception of 1 cheat day per week if you can't fathom giving up wheat altogether).
4.  Wheat raises your blood sugar even more than table sugar
The type of complex carbohydrate that comprises wheat is called amylopectin A, which is a type of carb that is unique in that it is digested so fast that it highly affects blood sugar more than most other carb sources.  Dr Davis cites studies in his book that prove that wheat bread can raise blood sugar HIGHER than table sugar, due to it's amylopectin A content.

Dr. Davis even states:  "Aside from some extra fiber, eating two slices of whole wheat bread is really little different, and often worse, than drinking a can of sugar-sweetened soda or eating a sugary candy bar."
Dr. Davis discusses the fact that the amylopectin A which is uniquely found in wheat and not other sources of carbs raises blood sugar to a much higher degree than most other carbohydrates sources, regardless of whether they are simple or "complex" carbs.  He continues, "In fact, the degree of processing, from a blood sugar standpoint, makes little difference: Wheat is wheat, with various forms of processing or lack of processing, simple or complex, high fiber or low fiber, all generating similarly high blood sugars."

5.  Excessive wheat consumption leads to visceral fat in the abdomen
There are many causes of visceral fat in the abdomen and Dr Davis isn't trying to fully lay the blame on wheat, but he makes a case that shows that wheat is a heavy contributor to visceral fat.  Through a combination of wheat's trigger on the blood sugar and insulin process in your body, the ability of wheat to automatically increase calorie consumption, as well as the digestive system inflammation characteristics of some of wheat's contituents, including gluten, this all leads to a greater chance of developing visceral fat in your abdomen.
And as you know from my article above, visceral fat is particularly dangerous as once it accumulates in your gut and around your organs, it continuously releases inflammatory molecules into your system.  We've talked before about how high fructose corn syrup and other junk foods can increase visceral fat, but Dr. Davis makes a strong case for how wheat can also contribute to visceral fat accumulation.
The message... Eliminate the wheat (aside from one cheat day per week if you absolutely must), and you'll lose the belly much faster.
6.  Irritable Bowel Syndrome (IBS) and Acid Reflux may be linked to wheat consumption
Dr. Davis makes a good argument in his book showing links between gluten consumption and IBS and acid reflux.  He states, "Eliminate wheat, acid reflux improves, symptoms of IBS improve. Unfortunately, this effect has not been quantified, though investigators have speculated on how large a role gluten plays in non-celiac sufferers of IBS and acid reflux."  Dr. Davis also states that hundreds of his own patients have seen complete or partial relief from IBS and acid reflux with gluten removal from their diet.
If you have IBS or acid reflux, you should at least consider removing wheat from your diet for 2-3 weeks and see if the symptoms go away.  It certainly can't hurt anything to eliminate wheat for a couple weeks (after all, there's nothing "essential" about eating wheat), and if anything, you'll lose some body fat as well in the process.
7.  Wheat consumption leads to accelerated aging
Eating too many wheat products such as bread, bagels, muffins, cereal, crackers, etc increases compounds in your body called Advanced Glycation End Products (AGEs).  I talked in a previous article here about how sugar can make you age faster and how to prevent this.
But it's not just sugar and corn syrup that cause this problem... as we've already mentioned in this article, the main starch in wheat products is a very unique and fast digesting starch called Amylopectin A, which raises blood sugar even more significantly than table sugar.  Due to the significant blood sugar effect of wheat products (yes, even "whole wheat"), this means it increases those nasty AGEs in your body which contribute to premature aging and wrinkles.

8.  Too much wheat in the diet can cause ACNE problems
According to Dr. Davis, pimples (aka, acne) affects up to 95% of 16-18 year olds in western cultures, and even affects 50% of adults over age 25 with intermittent bouts.
But Dr. Davis provides evidence that acne is NOT caused by genetics, but rather almost entirely by diet.  He discusses how cultures that rely on a basic hunter-gatherer diet, or some other form of diet that does not include wheat or sugar, have been curiously acne free (until western diet influences came in of course).
Dr. Davis talks about how acne is nearly universal in young Americans, but does not occur at all in other cultures.  He states, "Some cultures display no acne whatsoever. Cultures as wide ranging as the Kitavan Islanders of Papua New Guinea, the Ache hunter-gatherers of Paraguay, natives of the Purus Valley in Brazil, African Bantus and Zulus, Japan's Okinawans, and Canadian Inuit are curiously spared the nuisance and embarrassment of acne."
Dr. Davis then cites research that shows that once Western influence introduced wheat, sugar, and other processed foods into the diets of the Okinawans, the Inuits, and the Zulus, acne soon followed.
9.  Wheat consumption contributes to heart disease risk
Another interesting chapter in the book Wheat Belly is where Dr. Davis makes a strong case that frequent wheat consumption increases your heart disease risk.
As you may have heard before, the LDL particles in your blood stream can be characterized as large puffy LDL types (which do not contribute to heart disease) or small dense LDL particles (which do contribute to plaque buildup and heart disease).  Dr. Davis states, "Foods that increase blood glucose the most therefore translate into both greater quantities of small LDL and increased glycation of small LDL.  So heart disease and stroke are not just about high cholesterol. They are caused by oxidation, glycation, inflammation, small LDL particles ... yes, the processes triggered by carbohydrates, especially those made of wheat."
10.  Eating wheat adds a large acid burden that your body must deal with
Your body is hard wired to keep a very precise pH level in your body of approximately 7.4.  What foods you consume either contribute acidifying compounds or alkaline compounds.  A natural hunter-gatherer diet is well balanced with the acid compounds of meats being easily counteracted by alkaline producing fruits, nuts, and veggies.  But when you add the acid burden of grains to the equation, the acid-alkaline balance shifts towards acid.
The more acidifying compounds that you eat or drink (soda, grains, sugar are examples), the more your body needs to pull calcium compounds out of your bone to regulate pH in your body.  This can cause weak bones and osteoporosis as you age.
According to Dr. Davis, grains such as wheat account for 38% of the average American's acid load.  Dr Davis states, "Around 10,000 years ago, the formerly alkaline human diet pH balance shifted to the acid side with the introduction of grains, especially the most dominant of grains, wheat.  The modern human diet of plentiful "healthy whole grains" but lacking in vegetables and fruit is highly acid-charged, inducing a condition called acidosis. Over years, acidosis takes it's toll on your bones."
Dr. Davis also cites a University of Toronto study that showed increased gluten intake increased urinary calcium loss by 63%, along with increased markers for bone weakening.  So even if you're not Celiac or gluten sensitive officially, this is yet another reason to consider reducing or eliminating gluten and wheat from your diet.
11.  A link between wheat consumption and joint degeneration, including arthritis
Dr. Davis also includes a chapter about how eating too much wheat over the years is linked to joint problems and pain, including arthritis.  Dr. Davis states: "The more wheat products you consume, the higher and more frequently blood glucose increases, the more glycation occurs. Glycation represents an irreversible modification of proteins in the bloodstream and in body tissues, including joints such as the knees, hips, and hands.  The cartilage in joints is uniquely susceptible to glycation, since cartilage cells are extremely long-lived and are incapable of reproducing."
Dr. Davis continues... "The damage of glycation is cumulative, making cartilage brittle and unyielding, eventually crumbling. Joint inflammation, pain, and destruction results, the hallmarks of arthritis."
The message... if you want healthy joints for life (I know I still want to be enjoying skiing and mountain biking, two of my favorite things in life, for decades to come) then Dr. Davis makes a strong case that eliminating or greatly reducing wheat in your diet can be an important step to help protect your joints as you get older.  And if you already have arthritis, it's a worthy test to eliminate wheat from your diet for a full 3-4 weeks and see if you notice some relief.  After all, what could it hurt... if anything, a side effect of eliminating wheat is that you'll drop some body fat.
Summary and Choices -- Do we eliminate or reduce wheat in our diets? 
As you can see in the 11 major points we've discussed above, there are a lot of negative consequences to your health of eating too much wheat.  And I'd be hard pressed to find any benefits whatsoever of eating wheat.
Fiber content may be the only possible benefit of wheat, however you can easily get more than enough fiber in your daily diet from fruits, nuts, and veggies instead, without the harmful health effects of wheat.
So you have a choice at this point... if you're the type of person who will do anything to improve your health and have a better body, both in looks and internal health, eliminating wheat is your best bet.
But if you're like most people, the thought of never eating wheat cereals, breads, muffins, pasta, and crackers is just too hard to bear.  If you're this type of person, you can still reap the benefits of greatly reducing wheat in your diet, but minimize your consumption to one weekly cheat day.  It helps to only have this cheat day which might include your favorite wheat products at restaurants, so you keep all wheat foods out of your house and not be tempted by them during the week.
Remember that one very pleasant side effect of eliminating wheat at least 6 days a week is that most people reduce their body fat significantly after making this choice and sticking to it.
And as we've talked about in this article, reducing or eliminating wheat can also prevent acne, reduce heart disease risk, slow down the aging process, reduce symptoms of IBS or acid reflux, help stabilize your blood sugar (assuming you're not still eating loads of sugar and wheat-free junk food), reduce diabetes risk, reduce visceral fat in your abdomen, and more!
Considering the possible benefits to our appearance and health, I'll choose to continue to reduce wheat in my diet!  For me, I've chosen to not completely eliminate wheat, but rather to never have it in my house, and only indulge in wheat products on once-weekly cheat days or while on vacation.
Do you want a healthier and better looking body?  The choice is yours!  Although we still need to consider major health killers such as sugar, HFCS, processed soy foods, processed corn foods, trans fats, and other junk foods, the case has been made that wheat is one of the biggest culprits in our health problems.

2 Common Foods in Your Diet That May be Making You Gain Weight and Get Sick

Of course, you've probably heard a million times now how bad trans fats and high fructose corn syrup are for your health... so I'm not going to give you that same old story.
Instead, we need to look at a couple common foods that are probably in your diet in large quantities and may be causing major problems such as weight gain, headaches, sicknesses, indigestion, etc, etc... and those possible culprits are:

Wheat and Dairy
Don't worry, I'm NOT going to tell you that both of these staples need to be eliminated permanently from your diet... but read on to see an interesting test that may help you a great deal...
In all of my years of personal training and nutrition counseling, if I had to choose a couple VERY simple dietary changes that have made the biggest difference for my clients in allowing them to FINALLY see fat loss results (and other health problems solved), it would be this following test:
1. Test removing all wheat products from your diet for 2 entire weeks, and take notice of how you feel, look, and your body composition.  This means removing all bread, pasta, crackers, cookies, cakes, muffins, bagels, and other wheat-based foods, unless they are 100% wheat-free.  Don't worry, it's only 2 weeks for this test... you'll survive!  Just beware of gluten-free versions of these junk foods unless they are low-carb as well.
2. Test removing all dairy from your diet for 2 entire weeks, and take notice of how you feel, look, and your body composition.  Don't worry, we'll talk in a minute about how to keep dairy in your life if you find out that you are sensitive to some forms of it.
The best way to do this is to eliminate them both for 2 full weeks, and then reintroduce one at a time so that you can determine if one of them or both wheat and dairy are causing negative health effects for you.
Wheat and dairy are easily 2 of the biggest intolerances that a large percentage of the population has.
Now this does NOT mean that I'm saying you have to entirely eliminate wheat and dairy for the rest of your life, but what I am saying is that this is an important test to do for about 2 weeks to gauge if you see some dramatic changes in your body fat percentage, how you look and feel overall, your energy levels, and other health and digestive issues.
If you do the 2-week elimination of wheat and dairy and don't feel that it helped you at all or made you feel better, then you can probably do ok on small to moderate amounts of each.
Most people do not realize this, but a large percentage of the population has at least some degree of intolerance to the gluten in wheat and several other grains. The biggest offender is wheat though, as it's in such a large percentage of the average western diet... from breads, to pastas, to bagels, to cakes, wraps, cereals, etc, etc.
Most people don't have the extent of intolerance that a celiac has, but most people feel much better, improve dozens of health problems, and also lose fat faster when they eliminate wheat from their diet.
In fact, I just had a client last week tell me that when she eliminated wheat from her diet, her chronic headaches disappeared almost instantly... these are headaches she's been having for years, and after eliminating wheat from her diet, they are gone (along with some body fat that she lost too!).

What about me?  Do I still eat wheat?
Well, what I personally do is try to only eat wheat on cheat days, which many times means when I'm out at restaurants or at parties, barbeques, etc.  Since wheat is so integral in the typical western diet, it's almost impossible to avoid when eating out or at other people's houses.
But I have virtually ZERO wheat products in my own house usually (with the exception of an occasional piece of sprouted grain bread once or twice a week).  Anything is simple to avoid at least 90% of the time, when it doesn't even exist in your cabinets!

Now with as anti-wheat as I am, I'm actually a huge fan of dairy... However, ONLY if the dairy is raw milk or raw cheese and from grass-fed cows. Did you know that many people who "think" they are lactose intolerant actually can drink raw milk without a problem?  This is because the live enzymes and friendly bacteria in raw milk aid in the digestion of the lactose and the proteins in milk. These enzymes and friendly bacteria are destroyed in pasteurized milk, which makes it more difficult to digest for many people.

I know this is a controversial topic, so you need to obviously do your own research...but check out the realmilk.com site to make your own decision about raw dairy.
If I can't get raw dairy, I choose to go mostly dairy-free (with the exception of non-sweetened full-fat yogurt and kefir, which are easier to digest due to the live probiotics in them). But I avoid commercial milk because I feel that the pasteurized, homogenized milk is not suitable for long term consumption in terms of health.  Many scientists believe that homogenized milk fat is the most dangerous type due to the machine-created tiny particles of fat that enter the blood stream more readily, which is not an issue with non-homogenized milk.
Keep in mind that yogurt, cheese, and kefir generally use non-homogenized milk, so I view them as more acceptable and healthy (as long as grass-fed) than homogenized milk itself.  And of course, yogurt, cheese, and kefir have good probiotics, so are beneficial in that respect too.
By the way, you can always search to see if raw milk co-ops or farms are available in your area on RealMilk.com.  You'd be surprised at how many co-ops are available that deliver from rural areas to urban areas.  It's important to make sure that the farm is reputable and certified (in some states) to produce raw milk. Most raw milk farms are the cleanest operations in the entire dairy industry.
oh, and for the "germo-phobes" out there... I've been drinking gallons upon gallons of raw, full fat milk for about 8 years now (I drink about 1-2 gallons per week when I can get it, which is only a couple weeks a month, so I naturally cycle my dairy intake), and I've never once gotten sick from raw milk, nor has anybody else that I know that's been drinking it long term... so to all of these so-called "experts" out there telling you that "there's a reason they pasteurize milk, because it's dangerous if not"... well, they obviously don't know what they're talking about.  If it was "dangerous", I surely would have gotten sick at least once after 8 years of drinking it.
Plus, the full-fat milk certainly has not made me fatter either... I used to foolishly drink skim milk only years, but now for the last 8 years, I've drank nothing but FULL-FAT raw grass-fed milk, and I'm easily in the best shape of my life now and leaner than ever.  And I also use FULL-FAT grass-fed cream in my coffee each day, and it's certainly not adding any body fat on me!  In fact, the healthy CLA fats and vitamin K2 in full-fat grass-fed cream is VERY healthy for you, as vitamin K2 from grass-fed dairy fat has been shown to reduce heart disease risk and increase your body's utilization of vitamin D.
Regarding raw vs pasteurized milk, people are more likely to get sick from pasteurized milk, because mass factory farms are generally dirtier operations with animals that are in poorer health than grass-fed raw milk farms.
And don't forget the high levels of fat-burning, muscle building CLA in full-fat, raw, grass fed milk (and omega-3's)!
Back from the tangent... I think this elimination of wheat and (pasteurized, homogenized) dairy is one of the most important tests anyone can easily do to see if wheat and dairy are negatively affecting them. After all, it's only 2 weeks to test yourself!
A couple quick things to note:
1. Eggs are NOT dairy... I'm not sure why so many people seem to think that eggs are a dairy product (maybe because they're in the same section at the grocery store?), but there is absolutely no dairy in eggs... eggs are basically meat if you want to categorize them.  Regardless, eggs are practically a perfect food in terms of nutrition density.

2. When trying to eliminate wheat, this usually means that almost ALL processed foods have to be eliminated because wheat components are in so many processed foods.  One way that I personally get around this is to satisfy my cravings for baked goods with low-carb, gluten-free versions that use coconut flour and almond flour as the base instead of wheat flour.
